INGREDIENTS
250g ripe mangoes, diced (about 2 mangoes)
200 ml coconut milk (~1/2 can)
3-4 tbsp condensed milk (to preference, can be substituted for other sweeteners for vegan/lactose-free options)
1/8 tsp salt
1/2 cup mini tapioca pearls (sago pearls)
INSTRUCTIONS
Sago Pearls
1. Bring 5 cups of water to a boil. Once boiling, throw in the uncooked sago pearls and turn down the heat to a medium-low.
2. Stir constantly to avoid sticking/burning, and let the pearls cook for around 15 minutes, or until the pearls are translucent and no longer white.
3. Once cooked, drain the boiling liquid and immediately rinse under cold water to stop the cooking process. Set aside.
Mango-Coconut Mixture
1. In a blender, combine together the 250 g of diced mangoes, coconut milk, condensed milk, and salt. Blend until smooth. You may choose to chill this mixture for at least 1-2 hours if you prefer the dessert to be cold (optional, but highly recommended!)
2. Gently fold the mango-coconut mixture with the cooked sago pearls.
3. Serve and layer with more fresh mangoes!
